Rich Fruit Celebration Cake (8”)

Dark muscovado sugar

Plain flour

Raising agent (baking powder)

Vanilla essence

Ground Cinnamon

Mixed spice

½ tsp

Unsalted butter

260g (or thereabouts with whole egg – 5 large eggs)

Black treacle

1 tbsp

  • the cherries need to be washed.
  • Weigh out the cherries and vine fruits.  wash the fruit and drain through a sieve.  Pour over the brandy and allow to to steep for up to 6 hours.
  • Melt the butter and sugar together, stir until well mixed.  Cool
  • Weigh in the black treacle (mix)
  • Add the egg (mix well)
  • Sieve in the spice and flour – mix well
  • Stir the steeped  fruit, glace ginger into batter
  • Spoon into silicone lined tins and bake.

Oven times  2.5 hours approx
