Mich and the team at Atlantis were honoured to be asked to create not one, but TWO cakes to celebrate The Queen's Birthday and Platinum Jubilee Celebrations for The British Embassy in Abu Dhabi and Dubai.
Both cakes featured a painstaking hand painting of Her Majesty's Royal Coat of Arms (with special permission from Buckingham Palace). The middle tiers drew inspiration from the embroidery on The Queen's coronation dress with hand piped pearls and the rose, shamrock, thistle and leek representing the United Kingdom.
The base tier was dressed with sugar icing to create a (mathematically correct) union flag or regal purple and 24 carat edible gold stripes with the platinum jubilee logo.
In total the cakes took over 100 hours to create. The flavours served included a vanilla cake with fresh raspberry and rose buttercream and a moist chocolate cake with chocolate ganache buttercream, salted caramel and candied pecans.
